Frugivore Recipe: Mango-Young Spinach Salad

This salad is not only tasty due to the sweet mango and avocado mix, but it will also leave you satiated and add loads of micronutrients to your diet. It actually covers your daily need for vitamin K, folate, B2, and vitamin C (although, we might benefit from a vitamin C intake that is way higher than the RDA).

Ingredients

Ingredients salad:

  • One ripe mango cut into pieces
  • 1/2 avocado sliced
  • 2 cups young spinach leaves
  • 2 cups lettuce
  • Microgreens or sprouts

Mix the green ingredient in a bowl and add on top the mango, avocado, and microgreens.

Ingredients dressing:

  • Juice of 2 limes
  • 1/2 avocado
  • 3 Tablespoons of maple syrup or raw honey
  • A pinch of sea salt

Blend the ingredient as much as possible (in a blender the texture will be better, but by hand is just fine) and add to the salad.
