Frugivore Recipe: Satisfying Papaya Salad

This raw vegan papaya salad is not only a unique and tasty mix of flavors but also really rich and satiating. It can be used as a main dish or an eye-catching side dish. I use our berry dressing as a good combination.

Ingredients

  • 3-4 large green lettuce leaves
  • 1 small (or 1/2 large) sweet papaya, diced
  • 1 large carrot finely sliced (I simply use a peeler)
  • 1/2 celery sliced
  • 1 small cucumber, diced
  • 1 red bell pepper, thinly sliced
  • A handful of fresh cilantro, chopped
  • 1 avocado, sliced
  • 1/4 cup cashews or other nuts for garnish (optional)

Instructions

  • Layer the Greens: In a large bowl or individual serving bowls, start by laying a bed of lettuce leaves.
  • Combine the “hard” Ingredients with the Dressing: In a separate bowl, combine the carrot, cucumber, red bell pepper, cilantro, and celery. Pour the dressing over the salad and gently toss to combine. Make sure all the ingredients are well coated. Put the mix in the bowl with the lettuce leaves.
  • Prepare the Papaya and Avocado cubes: Peel the papaya, cut it in half, and scoop out the seeds. Peel the avocado and remove the seed. Slice both fruits into cubes.
  • Assemble the whole salad: Now add the avocado and papaya cubes on top of the rest of the salad.
  • Garnish and Serve: Garnish the salad with raw cashews or peanuts for added crunch and texture. Serve the salad with lime wedges on the side.
