Frugivore Recipe: Rainbow Smoothie – A Touch of Paradise!

After visiting Brazil and learning about tropical fruits, the rainbow-colored fruit smoothie that I have been served in Tunisia was my second “fruit discovery moment”. I think I had never drunk something with such a heavenly taste and visual: I think it touches a deeper remembrance of paradise. Thus it is a beautiful “dish” for guests or a healing drink for a loved one!

The smoothie is basically blended fruits that are beautifully arranged in colorful layers, that reminds us of a rainbow. You can – of course – choose the number of layers, and play withe the colors.

Instructions:

  1. Prepare each fruit layer separately. Start by blending the fruits for each color layer along with the Coconut milk, water or optionally maple syrup (for additional sweetness) until smooth. You can also blend the fruits in their frozen state and make this more of an ice-cream-type desert. Make sure each layer has a similar consistency.
  2. Once each layer is blended you can start filling the glasses: Gently add a layer on top of another layer.
  3. Garnish the smoothies with extra fruit, such as berries or kiwi slices, to make them even more colorful and appealing.
  4. Insert a straw or a long spoon and serve immediately to enjoy the vibrant and refreshing Tunisian fruit smoothie with rainbow colors!

Feel free to adjust the sweetness and consistency to your liking by adding more water, coconut milk, syrup or even bananas needed:

Ingredients for the different layers:

Blue-Purple

  • 2 cups of blueberries / frozen blueberries
  • Coconut milk
  • Maple syrup

Yellow like the sun

  • 2 ripe bananas
  • Coconut Milk

Healthy green

  • 1 cup diced kiwi
  • 1 cup spinach leaves
  • Maple Syrup

Red Love

  • 1 cup strawberries
  • 1/2 cup raspberries
  • 1/2 cup pomegranate seeds
  • Maple syrup
  • Strain after blending

Orange

  • 2 cups diced mango, apricot and/or mandarin
  • Coconut milk
  • Maple syrup

Flamingo orange

  • 2 cups cantaloupe melon, diced
  • 1/2 cup strawberries
  • Maple syrup

Pink

  • 2 cups diced watermelon
  • 1/2 pink dragon fruit, diced

Mint Green

  • 1 cup honeydew melon, diced
  • 1 cup cucumber, peeled and chopped
  • Optionally fresh mint leaves

Remember to have fun with the presentation and enjoy the delicious combination of flavors from various fruits in this colorful and delightful smoothie!
